Strawberry Cream Cheese Sandwiches

8 slices of whole wheat bread, crusts removed
1 tub of strawberry cream cheese, softened
8 large ripe strawberries, thinly sliced (an egg slicer works well)

1. Spread cream cheese thickly, edge to edge, on four slices of bread
2. Add single layer of sliced strawberries
3. Cover with remaining 4 slices of bread
4. Cut into desired shapes - triangles, rectangles or squares are easiest. If you want fancier shapes, use medium or large cooke cutters and cut the shapes out of the bread before spreading with cream cheese - hearts are a favorite at our house!

Baked Corn

This was my Pennsylvania Dutch Grandma's recipe.

2 cans of corn, drained
4 Tbs. butter
3 Tbs. flour
2 1/2 c. milk
2 Tbs. sugar
salt & pepper to taste
4 eggs, well beaten

Melt butter over medium heat.
Whisk in flour.
Add milk a little at a time, stirring constantly, until sauce is thickened.
Stir in corn, sugar and seasonings.
Stir in beaten eggs.
Pour into buttered casserole dish.
Bake uncovered at 350 F until lightly browned and center is firm (35-40 minutes for shallow dish, 55-60 for deep dish).

Mini Cheese Cakes

This was one of the things my mom used to make for Christmas (with green food coloring and bright red cherry pie filling!)

2-8oz packages of cream cheese, softened
3/4 c. granulated sugar
1 tsp. vanilla
1 tsp. lemon juice
2 eggs
1 box Nilla Wafers
1 can cherries (or cherrie pie filling, jam of your choice or maraschino cherries)
1/2 tsp. green food coloring (if desired)

Preheat oven to 375 F.
Put small paper baking liners in mini muffin tin.
Place 1 Nilla Wafer, rounded side down, on the bottom of each liner. You may need to chip a little off the cookie to make it fit; it should cover the bottom.
Cream sugar and cream cheese together; add vanilla and lemon juice and beat well.
Beat eggs and add them to the mixture.
Spoon mixture into cups and top with halved cherry or jam.
Bake for 25 min (or until very lightly browned).

Makes about 60 mini cheesecakes

Cottege Cheese Pancakes

These are great with maple syrup or fresh berries.

1/2 c. whole wheat flour
1/4 c. cornmeal (or quick oats)
1/4 c. white flour
1 tsp. baking powder
1 tsp. salt
2 c. small curd cottage cheese
5 eggs


Pour all ingredients into blender; I found that a "pulse/ice chopper" setting worked best.
Blend until everything is well mixed.
Ladle onto pre-heated non-stick griddle or pan (you know it's hot enough when water spritzed on the pan "dances" across the surface)
Turn when bubbles appear on the top of the pancake

Makes about 24 3" pancakes
